a recipe
peel skin off 3 potatoes & cut into thin slices/boil till cooked
boil half cup of peas along with potatoes for another 2 minutes
cut into tiny cubes 4-5 mushrooms & sauté in olive oil (or butter) for 3 minutes
fresh coriander – 20 leaves ..….5-6 mint leaves finely chopped for added flavor…..
now mash the potatoes & peas & add mushroom, coriander.
add salt to taste and coarsely chopped black pepper
add a teaspoon of olive oil
heat a griddle pan….add 1-2 teaspoon of olive oil to it.
make small round shaped balls of the mix and cook on preheated griddle pan for 4-5 min or until golden brown…change sides if you want this brown all over, the olive oil and moisture of potatoes will keep the balls from breaking…
take half/full brown balls out of griddle pan, place them on a grill-friendly tray
pour some fresh mozzarella cheese…sprinkle a few drops of olive oil on top
preheat grill for three minutes, put tray in over-grill for 3 minutes…this should melt the cheese
the olive oil will give it a shine….and flavor
serve with mint sauce or ketchup
total cooking time is less than 15 minutes......if you wish to skip the cheese & skip the butter, this is extremely low fat because there is no deep frying involved..thanks to the griddle pan...
